This is one of my all-time favourite dishes, so easy to prepare and bursting with flavour. This follows a Jamie Oliver recipe but there are many different versions based on the original from Genoa. Try it - use the best fresh ingredients you can lay your hands on and you won't be disappointed - promise!
#Later edit: when referring to fresh ingredients, I didn't mean the pasta itself. This is a subject which I know is controversial, but, for me, when using pasta shapes like linguine, rigatoni and so on, shop-bought dried pasta produces better results. For gnocchi and lasagne then yes, for the very best results you have to make your own. #justsaying
